About Maré by Rafael Cagali

Brighton and Hove's first Michelin-starred restaurant in over fifty years. Rafael Cagali — previously head chef who founded and still runs the two-Michelin-star Da Terra in London, with time at The Fat Duck and Quique Dacosta before that — opened on Church Road in September 2025 and picked up the star in February 2026. The cooking draws on Brazilian, Italian, and Japanese influences, built around seasonal Sussex produce. Thirty-eight covers. Charlie Lee runs the front of house. The tasting menu changes regularly. Book well ahead.
